2 Tbs vegetable oil
3 cloves chopped garlic
2 sliced white onions
2 Serrano chilis, sliced lengthwise. If you like things spicy, keep all the seeds. I usually leave about half of them in.
2 cups loosely packed fresh basil, Thai basil if you can find it
2 cups or how ever much leftover turkey you want to use up
1 lb package rice noodles or spaghetti
Sauce
3 Tbs soy sauce
3 Tbs fish sauce
1 tsp sugar
1 tsp corn starch
- Whisk cornstarch and sugar in a small bowl, set aside
- In wok or large skillet, heat oil over high heat
- Add garlic and chilis and stir for 30 seconds - no more!
- Add onions and stir fry for a few minutes, until the onions start to turn translucent
- Add cooked turkey and basil. stir in until basil wilts
- Mix in sauce and continue cooking until it thickens up a bit and turkey is heated through
- Serve over noodles cooked as per package instructions
